But nowadays things have changed, and hotels are really making an effort to prove that time spent in their communal areas is a valuable experience. Io non posso fare a meno di ricordare che i miei genitori che non volevano mai mangiare in hotel durante le vacanze perché pensavano che ci saremmo persi l’esperienza locale. E avevano ragione.
Ma al giorno d’oggi le cose sono cambiate e gli hotel stanno davvero facendo uno sforzo per dimostrare che il tempo trascorso nelle loro zone comuni è un’esperienza preziosa. Con l’aiuto dei migliori interior designer, ovviamente!

EXPERIENCES ARE THE NEW LUX
Designing for today means designing flexible, on trend spaces where people can socialise as much as eating. Every one of us likes socialising and eating out, and luckily this is now more affordable. The experience itself can be fantastic even if you just go out to eat a sandwich or pancakes with friends. It’s incredible how much design attention owners now put even in really small cafes.
But remember: if you try to appeal to everyone, you will fail. Niching down is the secret, even if you put off some customers. If you don’t serve a specific audience someone else will. On the other hand you’ll get a community of raving fans for your own niche.
Give people experiences they won’t forget and they will come back for more.

Progettare per le persone di oggi significa progettare spazi flessibili e di tendenza, in cui socializzare sia parte dell’esperienza almeno tanto quanto mangiare. Ognuno di noi ama socializzare e mangiare fuori, e per fortuna ora è ancora più conveniente. L’esperienza in sé può essere fantastica anche se si va a mangiare semplicemente un panino o dei pancake con gli amici. È incredibile quanta attenzione progettuale venga data oggi anche ai caffè molto piccoli.
Ma ricorda: se con il tuo progetto vuoi piacere a tutti, fallirai! Trovarsi una nicchia di mercato è il segreto, anche se alcuni clienti non apprezzeranno. Quelli andranno da qualcun altro… Ma, dall’altra parte, avrai una comunità di fan entusiasti per la tua nicchia e il tuo lavoro.

SUSTAINABILITY has to be effortless
How do we incorporate sustainability into restaurants? We do it by making it effortless. Re-using bottles for example was not common practice just a few years ago. And now it has become normal, you go to Starbucks and bring your own cup. Restaurants need to make sustainability part of the thinking process in the same way.
Of course at the moment is expensive to do everything sustainable, especially in commercial spaces where at the end of the day people need to run a business. But that doesn’t mean we shouldn’t take small steps toward the right direction.

Come rendiamo un ristorante sostenibile? Lo facciamo rendendola easy. Il riciclo di bottiglie e stoviglie, ad esempio, pochi anni fa non era cosa comune e ora è diventato normale, ad esempio vai da Starbucks e ti porti la tua tazza. I ristoranti oggi devono rendere la sostenibilità parte di un modo di fare, una prassi.
Naturalmente al momento è costoso progettare tutto in maniera sostenibile, soprattutto negli spazi commerciali dove alla fine tirando le somme la priorità è gestire un’impresa e far tornare i conti a fine mese. Ma ciò non significa che non abbiamo tutti l’obbligo morale di fare piccoli passi verso la giusta direzione e un futuro più sostenibile.

TECHNOLOGY is meant to make your life easier while you enjoy other things
Nothing kills a socialising experience more than mobile phones and laptops. So, do we really want to order by ourselves on a tablet? Or would we rather be greeted by a real person? Designers now aim to confine technology in the background, to make operations functional. It should just be a tool to enhance customer experience.
One lucky example is the Dutch restaurant in the QO Amsterdam hotel, which a couple of weeks ago won the ‘Hotel Property Award 2018’.
In the restaurant waitresses are extremely engaging as part of the experience. For example telling customers how their grandmothers used to make those dishes, and the connection between food and local traditions!

Niente uccide la socializzazione più di telefoni cellulari e laptop. Quindi, vogliamo davvero ordinare da soli su un tablet? O preferiremmo essere accolti da una persona reale?
I progettisti ora puntano a limitare la tecnologia ad un sottofondo, per rendere le operazioni più semplici e funzionali. La tecnologia infatti ovrebbe essere solo uno strumento per migliorare l’esperienza del cliente.
Un esempio ben riuscito è il ristorante olandese nell’hotel QO Amsterdam, che un paio di settimane fa ha vinto l‘Hotel Property Award 2018.
Nel ristorante le cameriere sono estremamente coinvolgenti, per rendere i clienti parte dell’esperienza. Ad esempio, raccontano ai clienti come le loro nonne erano solite preparare quei piatti e il legame tra il cibo e le tradizioni locali!

ISOLATED TOGETHERNESS
Have you ever wanted to be part of something while at the same time having the opportunity to close into your thoughts if you want to? If so, you are not alone. This is an increasing phenomenon named ‘isolated togetherness’ which is affecting design choices.
For example, people want to go to a restaurant and eat alone but then they want to stay longer with their laptop, rather than go back home and work alone. Another example is the increase of bar into restaurants, so that whoever is eating alone could sit at the counter and still feel part of a bigger experience. This is a growing need due to the amount of people travelling alone nowadays, not just for business but also by choice.

Hai mai desiderato far parte di qualcosa e allo stesso tempo avere l’opportunità di chiuderti nei tuoi pensieri, se vuoi? Se è così, non sei solo. Questo è un fenomeno in forte aumento (in inglese, denominato ‘isolated togetherness’ ) che sta influenzando le scelte di design.
Ad esempio, le persone vogliono andare in un ristorante e mangiare da sole, ma poi vogliono rimanere più a lungo con il loro portatile, piuttosto che tornare a casa e lavorare da sole. Un altro esempio è l’aumento dei bar nei ristoranti, in modo che chi sta mangiando da solo possa sedersi allo bancone e sentirsi ancora parte di un’esperienza più grande.
Questo è un bisogno crescente dovuto alla crescente quantità di persone che viaggiano da sole, non solo per affari ma anche per scelta.

COMMUNITY
As we said, dining experience in hotels is changing. Most hotels nowadays want their guest to leave their rooms and spend more time downstairs, populating their communal areas. That’s why for example some of them don’t even put a mini bar in the room anymore.
They ask outside caterers to open their restaurants into the hotel to get people stay in there as long as possible, and also to attract local customers who get mixed with the hotel guests.
A new concept that is very popular in Asia and is starting to take over in America as well is the food court. Hotels are starting to incorporate those into their offer. It’s not as popular in Europe, because we associate food courts to malls, but we’ll probably see more of those.
The winning point is giving people two type of experiences at the same time: single seating and communal seating. Additionally it gives the chance to save time and eat quickly if people want to.

Come abbiamo detto, l’esperienza culinaria negli hotel sta cambiando. La maggior parte degli hotel al giorno d’oggi vuole che i loro ospiti lascino le loro stanze e trascorrano più tempo al piano inferiore, popolando le aree comuni. Ecco perché ad esempio alcuni di loro non mettono nemmeno più un minibar nella stanza.
Si associano a ristoratori esterni affinché questi aprano il loro ristorante dentro albergo per far sì che la gente rimanga lì il più a lungo possibile. E anche per attirare i clienti locali che si mischino agli ospiti dell’hotel.
Un nuovo concetto molto popolare in Asia e che sta iniziando a prendere il sopravvento in America è anche quello di food court. Gli hotel stanno iniziando a inserirli nella loro offerta. Non è così popolare in Europa, perché noi associamo le food court ai centri commerciali, ma probabilmente ne vedremo di più.
Il punto vincente è offrire alle persone due tipi di esperienze contemporaneamente: posti singoli e posti a sedere in comune. Inoltre si dà la possibilità di risparmiare tempo e mangiare velocemente se le persone lo desiderano.

AUTHENTICITY
This is a crucial point as Millennials are now particularly aware of it. Many of them would be easily put off booking a hotel if it had no social media presence. Guests share images of hotels (including bar, pool, restaurant, bedroom) that they have stayed in and are likely to book a hotel because they had seen images from someone they follow on social media.
How can owners deal with it? The answer is a necessary investment in design, furniture and finishes. As well as the management of social media. New generations want to be told a story, whether this is about the food they are eating or the design process. Stories create authenticity and people will remember them.

Questo è un punto critico in quanto i Millennial di oggi sono particolarmente consapevoli di ciò che consumano. Molti di loro facilmente non prenotare in un hotel, se questo non ha una presenza sui social media che mostra loro l’hotel prima di partire. Gli ospiti inoltre poi condividono le immagini degli hotel (tra cui bar, piscina, ristoranti, camere da letto) in cui hanno soggiornato e questo è un incentivo per altri a prenotare in quell ‘hotel, proprio perché ne hanno visto le immagini di qualcun altro sui social media.
Come adeguarsi? La risposta è investire nel design, nell’arredamento e nelle finiture. Così come nella gestione dei social media. Le nuove generazioni vogliono che le si racconti una storia, sia che si tratti del cibo che stanno mangiando sia del design. Le storie creano autenticità e legame con il cliente.

STRONG BRAND, WIDER AUDIENCE
How do you create a unique experience in a hotel that’s evolving? This is a challenge for example for hotels that were born specifically for leisure and then evolved to satisfy a much wider audience, including business travellers. How do you satisfy all these different clients keeping that sense of genuineness?
The answer is branding. Once your message is clear and your brand stands for specific values, than you can start bringing humanity even in a 3000 bedroom hotel or a massive food court!

Come creare un’esperienza unica in un hotel, in un mondo che si sta evolvendo sempre più velocemente? Questa è una sfida, ad esempio, per gli hotel che sono nati specificamente per vacanze e poi si sono evoluti per soddisfare un pubblico molto più ampio, compresi i viaggiatori d’affari. Come si fa a soddisfare tutti questi clienti diversi mantenendo quel senso di genuinità?
La risposta è il branding. Una volta che il messaggio è chiaro e il marchio è sinonimo di valori specifici, allora si può rendere a misura d’uomo persino un hotel da 3.000 camere da letto o una gigante food court!
